Karai shutir kochuri – Stuffed Puri

Bengalis do not exactly have puri, they have what is called a – Luci. And if it is karai-shutir kachuri (stuffed luci), then nothing like it.

Let us have a look at the recipe –

Ingredients required for green peas paste-

Green peas – 1/2 kg

Garlic- 8-10 cloves

Ginger – 2 cm thick

Green chillies – 4 (more if you want it spicier)

Hing or Asafoedtida – 2 pinch

Salt- as per taste

Vegetable oil- 1tsp

Ingredients required for making luci-

Flour- 1/2 kg

salt- 1/2 tsp (optional)

vegetable oil- 1/3rd cup

water

Vegetable oil – 1 Cup for deep frying

METHOD

Making the paste-

Boil the green peas with salt till they are soft. Sieve excess water out. Mash them and keep aside.

Make a paste of ginger, garlic and green chillies.

Put oil in a pan (on medium flame). Put hing followed by the ginger-garlic-chilli paste. Fry till brownish.

Put the mashed green peas in the pan and stir it till the water evaporates.  However, be careful not to burn the mix.

Once the mixture is considerably dry (but not in powder form. If it is devoid of any moisture then the kachori won’t taste good), take it off flame and let it cool down.

Now Preparing the luci-

First make the dough for luci. Put sufficient oil and keep kneading the dough. Finally put water and knead it till it is consistent and you can make balls out of it.

Roll balls of it.

Finally put the green peas paste into the balls. With the help of a rolling pin, flatten those balls.

Take oil in a frying pan/wok . Deep fry the flattened balls.

Take them out on a paper so that excess oil is soaked out.

There you have- hot and delicious karai shutir kachori!
