Sweet Tomato Chutney

This is a typical bengali dish which accompanies sweets after a meal.

Ingredients:

Tomatoes- 1 kg

Sugar- as per requirement (atleast 1/2 cup)

Salt – as per taste (atleast 1 tsp)

Bay leaves- 1

Red chillies-1

Ginger- 1/2 cm cut

mustard seeds- 1 tsp

mustard oil- 1/2 tsp

dates- 1/2 cup (optional)

Raisins- 10-15 (optional but it tastes good if you put it)

Method

Slice tomatoes into small pieces.

Heat oil in a pan/wok. Put mustard seeds, bay leaf, red chilli in the hot oil, stir for 5 seconds. The mustard seeds would start sputtering by now.

Add the chopped tomatoes and salt. Stir and leave it to cook on low flame for 10 minutes.

Add some sugar and water (if required). Leave to cook on low flame for 10 minutes.

Check for taste (sugar and salt). Add pounded-ginger, raisins, dates and cook for 10 mins.

Serve hot or cold after meals.
